Passionfruit Slice 🍋🥭
Ingredients:
Base:
- 250 g plain sweet biscuits crushed
- 125 g unsalted butter melted
Filling: - 395 g sweetened condensed milk
- 1/2 cup fresh passionfruit pulp
- 1 cup thickened cream
- 1 tsp vanilla extract
Topping: - 1 1/2 cups icing sugar
- 1/4 cup passionfruit pulp
- 2 tbsp boiling water
Directions:
1️⃣ Prepare the base:
- Line a 20 cm square tin with baking paper.
- Mix crushed biscuits and melted butter until combined.
- Press mixture firmly into the base of the tin.
- Chill in the fridge for 20 minutes to set.
2️⃣ Make the filling:
- In a bowl combine condensed milk passionfruit pulp thickened cream and vanilla extract.
- Whisk until smooth and thick.
- Pour filling over chilled base and smooth the top.
- Refrigerate for 1 hour to firm.
3️⃣ Prepare the topping:
- In a bowl mix icing sugar passionfruit pulp and boiling water until smooth.
- Spread topping evenly over the set filling.
4️⃣ Chill:
- Refrigerate for 2 to 3 hours until fully set.
- Lift out and slice into squares.
To serve:
Serve chilled for a bright tangy and creamy slice that melts in your mouth perfect with tea or as a summer dessert
