Passionfruit Slice 🍋🥭
Ingredients:
Base:

  • 250 g plain sweet biscuits crushed
  • 125 g unsalted butter melted
    Filling:
  • 395 g sweetened condensed milk
  • 1/2 cup fresh passionfruit pulp
  • 1 cup thickened cream
  • 1 tsp vanilla extract
    Topping:
  • 1 1/2 cups icing sugar
  • 1/4 cup passionfruit pulp
  • 2 tbsp boiling water

Directions:
1️⃣ Prepare the base:

  1. Line a 20 cm square tin with baking paper.
  2. Mix crushed biscuits and melted butter until combined.
  3. Press mixture firmly into the base of the tin.
  4. Chill in the fridge for 20 minutes to set.

2️⃣ Make the filling:

  1. In a bowl combine condensed milk passionfruit pulp thickened cream and vanilla extract.
  2. Whisk until smooth and thick.
  3. Pour filling over chilled base and smooth the top.
  4. Refrigerate for 1 hour to firm.

3️⃣ Prepare the topping:

  1. In a bowl mix icing sugar passionfruit pulp and boiling water until smooth.
  2. Spread topping evenly over the set filling.

4️⃣ Chill:

  1. Refrigerate for 2 to 3 hours until fully set.
  2. Lift out and slice into squares.

To serve:
Serve chilled for a bright tangy and creamy slice that melts in your mouth perfect with tea or as a summer dessert
