So many soups, so little time 😍
From creamy favorites to hearty classics, there’s something for everyone.

Ingredients
🍲 Chicken Tortilla Soup
2 boneless skinless chicken breasts
¼ cup taco seasoning, or one taco seasoning packet
4 ounces can diced green chiles, mild or hot
15.5 ounces can black beans, drained and rinsed
14.5 ounce can diced tomatoes, juices included
15.25 ounce can whole kernel corn, drained
4 cups chicken broth
2 cups grated Mexican cheese
1 cup heavy cream
tortilla chips, or 6 corn tortillas, cut into strips either air fried or oven baked to crisp them up
Cilantro, one bunch for garnish

🍲 Stuffed Pepper Soup
1½ pounds lean ground beef
2 medium green peppers, seeds and stems removed and diced (1½ cups)
1 medium red pepper, seeds and stem removed and diced (1 cup)
1 cup sweet yellow onion, finely diced
2 tablespoons minced garlic
29 ounces tomato purée
14.5 ounces petite diced tomatoes, undrained
32 ounces beef broth
1¼ cups uncooked long-grain white rice
1 tablespoon granulated sugar
2 teaspoons kosher salt
1½ teaspoons dried Italian seasoning
1 teaspoon cracked black pepper
1 cup freshly shredded mozzarella cheese, optional garnish
2 tablespoons chopped fresh parsley, optional garnish

🍲 Cabbage Roll Soup
1 pound lean ground beef
1 medium yellow onion, diced finely
1 cup baby carrots, chopped
1 tablespoon garlic paste
1 tablespoon Worcestershire sauce
1 teaspoon salt
½ teaspoon ground black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 teaspoon Italian seasoning
½ head cabbage, cored and chopped into 1 inch pieces (about 5-6 cups)
5 cups beef broth
14 ounces petite diced tomatoes
16 ounces tomato sauce
2 tablespoons ketchup
2 bay leaf
½ cup uncooked long grain white rice
Parsley, chopped for garnish

🍲 Busy Day Soup
1 tablespoon olive oil
1 pound lean ground beef 93% to 7% (also known as ground sirloin)
1 packet onion mushroom soup mix, I used Lipton brand from a 1.8-ounce box
2 cups water, room temperature
4 cups 1 quart low-sodium vegetable broth
15.25 ounces whole kernel corn, drained
14.5 ounces cut green beans, drained
14.5 ounces peas and carrots, drained
14.5 ounces petite diced tomatoes, in juice
½ teaspoon salt
½ teaspoon black pepper
½ pound dry elbow pasta noodles (8 ounces)
