I’m sure your family is a lot like mine and you’ve got tons of extra curricular activities in the Fall months. Back to School means it’s back to after school practices, evening dance rehearsals and not much time to cook in the kitchen. That makes easy slow cooker meals so awesome, because you can get them prepped and let them cook themselves. Everyone has to eat, right?
1. Crock Pot Chicken & Potatoes
Ingredients:
4 chicken thighs, 4 chopped potatoes, 3 carrots, 1 tsp garlic, 1 tsp paprika, salt, pepper, 1 cup chicken broth
Instructions:
Add everything to the crock pot. Cook on LOW 6–7 hours or HIGH 3–4 hours.
2. Slow Cooker Beef Stew
Ingredients:
1 lb beef chunks, 3 potatoes, 2 carrots, 1 onion, 2 cups beef broth, 1 tbsp tomato paste
Instructions:
Mix all ingredients. Cook LOW 8 hours or HIGH 4–5 hours.
3. Honey Garlic Chicken
Ingredients:
4 chicken breasts, ½ cup soy sauce, ⅓ cup honey, 3 garlic cloves, 1 tbsp ketchup
Instructions:
Whisk sauce, pour over chicken. Cook LOW 6 hours. Shred and serve over rice.
4. Creamy Ranch Pork Chops
Ingredients:
4 pork chops, 1 ranch seasoning packet, 1 can cream of mushroom soup
Instructions:
Mix soup and seasoning, pour over pork. Cook LOW 6–7 hours.
5. Taco Soup
Ingredients:
1 lb ground beef (browned), 1 can corn, 1 can beans, 1 can diced tomatoes, 1 taco seasoning packet
Instructions:
Add all ingredients. Cook LOW 4–6 hours.
6. BBQ Pulled Chicken
Ingredients:
3 chicken breasts, 1 cup BBQ sauce, ½ onion sliced
Instructions:
Cook LOW 6 hours. Shred and mix with sauce. Serve on buns.
7. Creamy Chicken Alfredo
Ingredients:
2 chicken breasts, 1 cup heavy cream, 1 cup chicken broth, ½ cup parmesan, garlic
Instructions:
Cook chicken LOW 5 hours. Shred, stir in cheese. Serve over pasta.
8. Sausage & Peppers
Ingredients:
1 lb sausage links, 3 sliced bell peppers, 1 onion, 1 cup marinara sauce
Instructions:
Cook LOW 6 hours. Serve on rolls or over rice.
9. Vegetable Lentil Curry
Ingredients:
1 cup lentils, 1 can coconut milk, 2 cups broth, 1 tbsp curry paste, mixed vegetables
Instructions:
Cook LOW 6–7 hours until lentils are tender.
10. Mississippi Pot Roast
Ingredients:
1 beef chuck roast, 1 ranch packet, 1 au jus packet, 5 pepperoncini, ¼ cup butter
Instructions:
Place roast in crock pot. Add remaining ingredients on top. Cook LOW 8 hours.
