Ingredients
For the Sandwich:
- 4 slices of whole-grain or sourdough bread
- 2 tbsp mayonnaise or garden-fresh herb spread
- 1 tsp Dijon mustard (optional)
- 1 cup lettuce leaves, washed and dried
- 1 medium tomato, sliced
- 1 small cucumber, thinly sliced
- 1 small red onion, thinly sliced
- 1 avocado, sliced
- Fresh herbs: basil, parsley, or dill (a few sprigs)
- Salt and black pepper to taste
- Optional: cheese slices (cheddar, mozzarella, or goat cheese)
For a Crunchy Twist (Optional):
- 1 small carrot, grated
- ½ cup alfalfa sprouts or microgreens
- ¼ cup roasted sunflower seeds or walnuts
