Ingredients

For the Sandwich:

  • 4 slices of whole-grain or sourdough bread
  • 2 tbsp mayonnaise or garden-fresh herb spread
  • 1 tsp Dijon mustard (optional)
  • 1 cup lettuce leaves, washed and dried
  • 1 medium tomato, sliced
  • 1 small cucumber, thinly sliced
  • 1 small red onion, thinly sliced
  • 1 avocado, sliced
  • Fresh herbs: basil, parsley, or dill (a few sprigs)
  • Salt and black pepper to taste
  • Optional: cheese slices (cheddar, mozzarella, or goat cheese)

For a Crunchy Twist (Optional):

  • 1 small carrot, grated
  • ½ cup alfalfa sprouts or microgreens
  • ¼ cup roasted sunflower seeds or walnuts
