Black Cocoa Loaf Cake
Ingredients:
- 1 cup all-purpose flour
- ½ cup black cocoa powder
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup unsalted butter (softened)
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup sour cream
- ¼ cup whole milk
- ¼ cup hot water
For Ganache Glaze
- ½ cup heavy cream
- 100 g dark or semi-sweet chocolate (chopped)
- ½ tsp vanilla extract (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan.
- Sift together flour, cocoa powder, baking powder, baking soda, and salt.
- Beat butter and sugar until light and fluffy.
- Add eggs one at a time, then mix in vanilla, sour cream, and milk.
- Add dry ingredients gradually and mix gently.
- Stir in hot water to make a smooth batter.
- Pour into pan and bake for 45–55 minutes.
- Cool completely.
- Heat cream until just simmering.
- Pour over chocolate, rest 1 minute, then stir smooth.
- Let ganache cool slightly.
- Pour over cake, let set, slice, and serve.
