Black Cocoa Loaf Cake

Ingredients:

  • 1 cup all-purpose flour
  • ½ cup black cocoa powder
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup unsalted butter (softened)
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup sour cream
  • ¼ cup whole milk
  • ¼ cup hot water

For Ganache Glaze

  • ½ cup heavy cream
  • 100 g dark or semi-sweet chocolate (chopped)
  • ½ tsp vanilla extract (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan.
  2. Sift together flour, cocoa powder, baking powder, baking soda, and salt.
  3. Beat butter and sugar until light and fluffy.
  4. Add eggs one at a time, then mix in vanilla, sour cream, and milk.
  5. Add dry ingredients gradually and mix gently.
  6. Stir in hot water to make a smooth batter.
  7. Pour into pan and bake for 45–55 minutes.
  8. Cool completely.
  9. Heat cream until just simmering.
  10. Pour over chocolate, rest 1 minute, then stir smooth.
  11. Let ganache cool slightly.
  12. Pour over cake, let set, slice, and serve.
