Apple and Yoghurt Flan: Soft and Light

80 g sugar
60 g flour

H2 – Step 1: Preparation of the ingredients
Preheat the oven to 180°C (th. 6).
Lightly butter or oil a cake or flan pan.
Peel the apples, remove the core and cut them into thin strips.
H2 – Step 2: Making the flan batter
In a large bowl, whisk the eggs with the sugar until the mixture whitens and becomes foamy.
Stir in the plain yoghurt, vanilla extract, then add the flour, baking powder and cinnamon.
Mix until you get a homogeneous and smooth dough.
H2 – Step 3: Incorporating the apples and cooking
Add the apple slices to the batter. Toss gently to coat them well.
Pour the mixture into the prepared pan. Smooth the surface with a spatula if necessary.
Bake for 35 to 40 minutes until the flan is golden brown. The blade of a knife should come out clean.
