This unique recipe transforms simple chickpeas into a zesty, Mediterranean-inspired dish using olives, garlic, lemon, and herbs. It’s perfect as a snack, salad topper, or side dish.

Ingredients

  • 2 cups cooked chickpeas (or 1 can, drained and rinsed)
  • 2 tablespoons olive oil
  • 2 tablespoons olive brine (from a jar of green olives)
  • 1 tablespoon fresh lemon juice
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon chili flakes (optional)
  • 1/4 teaspoon black pepper
  • 1/2 cup green olives, sliced (pitted)
  • 2 tablespoons fresh parsley, chopped
  • Salt to taste

  • A splash of apple cider vinegar for more tang

Instructions

  1. Prepare the chickpeas
    If using canned chickpeas, rinse and drain well. Pat them dry with a paper towel for better flavor absorption.
  2. Heat the base
    In a large pan over medium heat, add olive oil and sauté the minced garlic for about 30 seconds until fragrant (do not burn).
  3. Add chickpeas
    Toss in the chickpeas and cook for 5–7 minutes, stirring occasionally, until slightly golden.
