Ingredients

  • 2 cups heavy cream (or coconut cream for dairy-free)
  • 1 cup unsweetened milk (or almond milk)
  • 1/3 cup unsweetened cocoa powder
  • 1/3 cup natural sweetener (like stevia, erythritol, or monk fruit – adjust to taste)
  • 1 teaspoon vanilla extract
  • A pinch of salt
  • 2 egg yolks (optional, for extra creaminess)

Instructions

1. Mix the Base

In a saucepan over medium heat, combine the milk, cocoa powder, and sweetener. Whisk continuously until the mixture is smooth and well blended.

2. Add Cream

Pour in the heavy cream and stir gently. Heat the mixture until warm, but do not let it boil.

3. (Optional) Add Egg Yolks for Creaminess

  • In a separate bowl, whisk the egg yolks
  • Slowly add a small amount of the warm mixture to the yolks while whisking (to temper them)
  • Pour everything back into the saucepan and cook on low heat until slightly thickened

4. Flavor It

Remove from heat and stir in vanilla extract and a pinch of salt.

5. Chill the Mixture

Let the mixture cool to room temperature, then refrigerate for at least 2–4 hours (or overnight for best results).

6. Freeze

With Ice Cream Maker:

  • Pour the chilled mixture into your machine and churn according to instructions

Without Ice Cream Maker:

  • Pour into a container and freeze
  • Stir every 30–45 minutes for 2–3 hours to keep it creamy

7. Serve

Once frozen to your desired consistency, scoop and enjoy!
